We stewarded the wine berries through the winery where we fermented the sugar out of them and gently pressed the new wine from the skins, stems and seeds. We’ll Always Have Paris…
As many of you know, the Champagne region is known for growing three primary grape varieties: Chardonnay, Pinot Meunier and Pinot Noir. As they traveled the world, Chardonnay and Pinot Noir became the most famous. Pinot Meunier, while still a handsome variety in Champagne, did not travel well. Alas, fame and fortune has changed many successful relationships.

Chardonnay is a beautiful and mischievous wine with passion fruit aromas and scintillating expressions of lemon grass and citrus. Stainless steel fermentation keeps it energetic and pure, a complete wine in her own right from start to finish.

Pinot Meunier, mind you, is not damaged goods - used maybe, but aren’t we all? When left to his own fermentation, Pinot Meunier produces a very aromatic and noteworthy wine. Usually a light garnet color, but with all the food friendly, mid-palate pleasure you could ask for. Endowed (naturally) with more acidity than Pinot Noir, Pinot Meunier plays well with several food groups.

Pinot Noir is the Machiavellian of the group. Often misunderstood and cast aside by the “Big Red” reviewers only to be discovered after hours at the most interesting A-List parties. Pinot Noir swirls and lingers with the widest array of foods. So many dishes, so little time…
